Sometimes I get an overwhelming desire to bake something tasty. It doesn't happen that often - I am more of a 'cook' rather than a 'confectioner' in this respect. But when it does, I put on my lovely flowery apron and arm myself with a mixer and spatula. Yesterday was one of these days, where inspiration (or probably a little bit of craving) hit me and I decided to bake something that was ridiculously simple and quick, but equally eye-rolling tasty.

During Summer months you don't really want to spend a lot of time stirring, mixing, frying and everything else that includes dancing around the stove and the oven. You will be surprised at how easy and quick, yet delicious the recipe is.
You will need:
  • a 300 gr packet of nuts and dried fruits mix
  • about 15 dates cut into halves
  • 4 eggs
  • 8 table spoons of sugar
  • 8 table spoons of flour
  • 3 table spoons of cocoa powder
  • 100ml of milk

Take two big bowls and separate yolks from the egg whites into each bowl.

Add sugar to the yolks and mix until the mixture is yellowish white and sugar is fully dissolved. Add sifted flour, cocoa powder and milk, mix all again.

Separately whisk the egg whites into a big tight foam - the like you would need for meringues. When it's ready add it to the previous blend of yolks and flour and mix thoroughly. Add the nuts and dried fruits and dates, mix again.

Take any baking tray you have got (or individual biscuit forms, if you wish) and lay it with a baking paper. Pour all the mixture into it and bake at 180C for about 55-60mins.

When it's done, turn the tray upside down onto a chopping board, remove the paper and cut into pieces. Enjoy!
